Chocolate Bark with Roasted Flaxseed = YUM!!

Seriously, this is good stuff!!! And the health benefits of flaxseed are incredible – it fights cancer, heart disease, cholesterol…and the list goes on and on and on!! If you are a “sweetaholoic” and want to try flaxseed for the first time, I highly recommend this recipe to you. The end result tastes similar to a Nestle Crunch bar. And then maybe, just maybe, you will be willing to add flaxseed to your salads, smoothies, etc.

Chocolate Bark with Roasted Flaxseed

Raw Flaxseed

Step 1: Roast your Flaxseed. Spread the flaxseed on a dry cookie sheet and bake at 350 degrees for about six minutes. Give it a stir {or a shake} halfway through.

Step 2: Melt your chocolate. I used semi-sweet because that is what I had, but I would highly recommend getting dark chocolate to maximize the health benefits of this sweet treat. To melt the chocolate, I used the directions on the bag. It worked out well!

Step 3: Add about two handfuls of flaxseed to your chocolate and stir it well.

Step 4: Spread the mixture into a thick layer on wax paper. Place in refrigerator until it fully hardens.

You’ll note that my husband couldn’t wait for me to take the final picture. I gave him a tiny taste test and he was HOOKED. This coming from the man who thought I was cuh-razy for adding flaxseed to chocolate.

Guess I proved him wrong….again.

p.s. Keep the chocolate in the refrigerator, it keeps it fresh tasting!  Also, store any leftover roasted flaxseed in an airtight container and in the refrigerator.
